If they were to do that, I would be game for an emergency deployable temporary 3rd seat option. Even if it were to be rear-facing in the back, just to make ends meet for those occasions in which another passenger is absolutely necessary. One that you could keep in your garage in case of a rainy day or that could deploy like a rumble-seat. For models which are 250 or 400 miles range there would likely be sufficient real-estate to incorporate a basic rumble-seat for such needs.
At the same time, I would not wish for any machinations to impact the production cycle of vehicles under a current commitment. But if, at the actual time of sale, this could be a consideration ona case by case by case basis whether or not the buyer would accept the possible delay this may cause for their own specific delivery, this could be a way in which it could be worked out without sacrificing the time-lines of every other expectant owner.
